Peanut Butter Oatmeal Muffins

Extra-ripe bananas and all-natural peanut butter make these oatmeal banana peanut butter muffins a healthier snack option! Made in one bowl and with no added sugar, these muffins will become a must-bake healthy treat!

Ingredients

1 cup oat flour (can be made at home by grinding oats in a dry grinder/coffee grinder)


3 medium ripe bananas, mashed


2 eggs (flax egg will not work in this recipe)


1 tablespoon cow milk or almond milk


¼ cup honey


2 teaspoon vanilla extract


3/4 cup Healthy Fuel peanut butter, creamy or crunchy


1/2 teaspoon cinnamon


1 teaspoon baking powder (leveled not heaped)


1/3 cup dark chocolate chips


1/4 teaspoon salt

Method

1. Preheat the oven to 175 C. Line the muffin/ cupcake tin with 12 liners and grease the liners to prevent sticking.


2. Mix the mashed bananas, Healthy Fuel peanut butter, eggs, honey, milk and vanilla extract in a bowl until well blended.


3. Add the dry ingredients - oat flour, baking powder, cinnamon and salt and mix until well combined and smooth.


4. Fold in the dark chocolate chips and fill each liner equally. Bake for 20-25 minutes.


5. Check with a toothpick for doneness. If the toothpick comes out clean, it’s done.


6. Remove and let it cool completely. Enjoy!!!
