Flourless Almond Butter Chocolate Chip Cookies


Besides being incredibly easy to make, these Flourless Almond Butter Chocolate Chip Cookies are healthy and sooo yummy. Made with just a few ingredients, these cookies hit the spot for that sweet craving and you can chomp them down guilt free. You can sub the mixed chocolate chips with just dark chocolate chips or just milk chocolate chips as well. If you are using only milk chocolate chips, reduce the sugar a little bit.


1 large egg

1 cup Healthy Fuel almond butter

1/2 cup coconut sugar (or brown sugar)

1/2 tsp baking soda

1/2 tsp vanilla extract (optional but tasty)

1/4 tsp salt

3/4 cup milk and dark chocolate chips mixed


1. Preheat the oven to 175C and line a baking sheet with parchment paper

2. In a medium bowl whisk the egg until beaten. Mix in the almond butter, then the brown sugar, baking soda, and vanilla (if using). Combine well using a hand whisk or a hand blender

3. Fold in the chocolate chips through the mixture

4. Divide the dough into 12 balls

5. Place them on the parchment paper and gently press down on the dough mounds with the back of a spoon

6. Sprinkle with some coarse salt and bake for 12 -13 mins 

7. Cool completely before transferring to another surface
